What is the one cooking item (other than a knife) that you can’t live without? 
When I cook for parties, I have three items with me at all times – my Chef’s Grip knife, my paring knife and my lemon zester. I love cooking with lemon! The zest of the citrus imparts intense flavor into whatever you are making.  The skin is loaded with essential oils. I also always have a wooden spoon with me at all times – it doesn’t need to be fancy or expensive. I can’t explain why but there is something warm about it.  Plastic tends to be too impersonal.
 
What is the craziest thing that you have ever been asked to cook? 
            I have been asked to make some pretty strange things but they are also things I would like to forget that I made.  So, on that note, I am going to go with alligator.  I mixed it with pork and made it into andouille sausage.  It was one of the dishes that I made at the World Food Championships and won the national Chef Challenge with.
 
What is your go to comfort food?
 
Without question, roasted chicken with gravy, mashed potatoes and peas in a shallot butter sauce!
